Blend the chervil, Fines Herbs, tarragon and chives in a bowl. Now take a small ball and break a few eggs. Then pour some milk, salt, 2 tbsp Fines Herbs and pepper. Whisk the mixture with fork.
Preheat your 8” nonstick omelette pan in medium heat and add olive oil over the pan. Now pour the egg mix in the pan and swirl it. Stir the egg mixture gently for a couple of seconds with spatula and swirl the eggs to make it circular. Avoid scorching by reducing the heat. Keep cooking it for 1 minute until the egg sets on the pan with a bit of liquid over the top. Remove the pan from the heat to flip the omelet. Add the cheese over the center and add toppings of roasted peppers. Fold the omelet three times and serve quickly.

Put the butter in a pot on low heat and keep it simmer until it separates. When solids melt to the bottom and fat rises, remove from heat and set it aside. Preheat your oven to 450F. Take a medium bowl, crack in the eggs and pour cream. Add some pepper and whisk until it turns foamy.
Turn on the stove in medium heat to preheat the pan. Add 2 to 3 tbsp of butter once the pan is heated. Add 1 ladle of eggs with 4-oz. ladle on the pan. Stir in with heat-resistant rubber spatula. Stop stirring if eggs are set. Cook the egg for just 1 ½ minutes by putting pan on the oven. Make sure it has soft touch once you remove the omelette.
